PUMPKIN PANCAKES



Is there such a thing as too much pumpkin during the fall…I think not! Which is why I decided to switch up our Sunday banana pancakes, with this yummy pumpkin recipe. Made with pumpkin puree, eggs, flour and a dash of cinnamon, these fluffy pancakes are healthy and dog friendly.



What I love about this recipe (aside from being one you can share with your pup), is that its gluten free & dairy free. These pancakes aren’t super sweet so to add some added sugar you can drizzle a bit of almond butter or hazelnut butter. Top them off with your syrup of choice - I personally recommend honey - and enjoy!

*if sharing with you dog, serve your dog’s pumpkin pancakes plain with no added toppings



WHAT YOU’LL NEED:

1 cup pumpkin puree

4 eggs

1/2 cup flour (I used almond flour

1 teaspoon cinnamon

DIRECTIONS:

1.In a large bowl, whisk together all of the above ingredients or put all the ingredients into a blender and blend until smooth.

2. Start to heat a pancake grill or nonstick pan to medium heat. DOG MOM TIP: Add a little coconut oil to your pan

3. Pour about 1/4 cup of the batter onto the pan. Wait until bubbles begin to form (about 2-3 minutes) then flip and cook for another few minutes or until bubbles form. Repeat this step until the batter is gone. Makes about 6-8 pancakes.
